Looking for where to eat steak and grilled meats in Cusco? The short answer: look for well-selected Peruvian beef, a grill master who respects the doneness you ask for, and a table to share. At Águeda we have all three, at three locations across the city, since the end of 2010. In this guide I explain how to choose the location, the cut and the grill for your group.
What makes a great grill
I have worked with meat since 2000. Before opening Águeda I spent a decade as a butcher and as a meat supplier to five-star hotels in Cusco. That is where I learned that a great grill starts long before the fire: it starts with choosing the right animal.
That is why all the meat at Águeda is Peruvian. We work with improved cattle from the region, raised in Puno, Anta and Sicuani, from breeds such as Angus, Fleckvieh, Brown Swiss, Belgian Blue and Criollo. Our premium cuts include Peruvian Angus. Each breed brings something different in tenderness and flavor, and you can taste it on the plate.

The other key is doneness. A good grill master cooks your cut the way you ask. If you are not sure, go for medium: it is the balance between flavor and juiciness for most cuts.
Our three locations: which one suits you
- Matará, in the Historic Center. At Matará 446-B, the most convenient if you are exploring central Cusco. It has two floors: 70 guests on the first floor and up to 100 in total. It also serves our seafood grill.
- Collasuyo, in Magisterio. On Collasuyo Avenue, by Manuel Prado and the Real Plaza mall. It seats up to 100 guests on two floors and is the only location with rotisserie chicken.
- Ttio. On Calle Manuel Gonzales Prada R-02, for up to 70 guests. It also serves our seafood grill.
All three are open Monday to Saturday from 12:00 to 21:30 and Sunday from 12:00 to 17:00. See the maps on our locations page.

Hungry table? Add an individual cut instead of moving up to the next grill size. For three people, for example, a Grill for Two plus a Tenderloin.

Alpaca: the meat you should not miss in Cusco
If you are visiting Cusco, my recommendation is to try alpaca. For me it is the best meat you can eat in Cusco: an Andean product, ours, which turns out tender on the grill with a flavor unlike any other meat.
We serve it two ways: the Alpaca Loin, a 240 g portion with the side of your choice, and the Alpaca Loin in Pepper Sauce, with Andean potatoes. Both cost S/.47.
Premium cuts
- Tenderloin (250 g, S/.47): the most tender cut of beef.
- Beef Picanha (290 g, S/.41): with its fat cap, juicy and full of flavor.
- Strip Steak (250 g, S/.38): the grill classic.
- Ribeye and Lomo Vetado (S/.46 and S/.45): for those who like more marbling.
Premium cuts come with the side of your choice: Andean potatoes, crispy yuca or fettuccine. When dining in, main courses include our complimentary salad bar.
